Cocktail hour is always a very important part of the day in the Fat Girl household. Nothing beats a delicious cocktail after a hard day’s work, especially if you can enjoy it up on your very own roof top. This cocktail came into being after I was desperate to make use of my blossoming thyme plant. Herb infused simple syrups can really take your cocktails up a notch, the thyme in this pairs perfectly with the gin and the blackberry, and since we had a bottle of fizz in the fridge we thought why not, though you could always try it with soda water if you are looking for something a bit lighter.


Makes 1 Pitcher
1 cup of frozen blackberries
6 shots of gin
1 bottle of dry sparkling wine
3 shots of thyme syrup
Fresh thyme to garnish

Thyme Syrup
1 cup of sugar
1 cup of water
10 sprigs of fresh thyme



1. To make the thyme syrup put the sugar and water in a saucepan until the sugar dissolves then turn off the heat. Next add the sprigs of thyme into the syrup and leave for 30 minutes before removing. The syrup stores perfectly in a swing top bottle.

2. To make the cocktail put your blackberries into your glass, top with the gin and thyme syrup, and muddle with the back of a spoon. Top the cocktail with sparkling wine and garnish with fresh thyme.
